PINAPPLE AND DATES PUDDING
Pinapple chopped -2 cups+3 slices
dates chopped -1 cup
milk-1 litre
sugar-11/2 cup+ 1/4 cup
gelatin-20g
custard powder-4 table spoon
cherries-10 numbers
violet grapes- for garnishing
Method of cooking
20g of gelatin is dissolved in 1/2 cup of water then add 1/2 cup of boiling water to it.keep it aside.
Chopped and sliced pinapple is boiled with 1/4 cup of sugar.(Pinapple should be boiled with sugar other wise some enzymes in pinapple will prevent the action of gelatin). 4 table spoons of custard powder is dissolved in half cup of cold milk. The remaining milk is boiled in a saucepan for 5 minutes with 11/2 cup of sugar.Add the custard solution to the boiling milk.Boil and add the gelatin solution to the milk and boil again till a thick consistency is reached.
Line the bottom of a dish with boiled pinapple slices. Pour the custard over it till a uniform layer is formed.Spread the chopped pinapples over it as a second layer and pour the custard agin. Spread the chopped datefruits over it as a third layer. Cover that layer with custard.Keep the pudding in a refrigerator for at least 4 hours(do not freeze).Place a plate over the dish and invert the dish over the plate so that the pinapple slices appear on the top of the pudding.Pinapple dates pudding is ready to serve.
